I have a question regarding GDPR.

I have a question regarding GDPR.
In the past few months I have seen a growing number of websites with privacy/cookie messages "powered by OneTrust". You know the kind of messages where you need to approve or edit your privacy/cookie settings before you can visit a website.
I'd never heard of OneTrust before. What kind of company are they? Do they gather data of the visitors of these sites? If so, what happens with the data? What is their business model? Do they sell the data to third parties? Should or shouldn't I use their services? Is there a Joomla extension they offer?
I'm usually wary of companies that offer "free" services that involve the data of my websites' visitors, like services from search engines or social media links.
Is there anyone who can give me more info?
